For Streusel Topping:
6 tablespoons cool salted butter, plus more for pan
¾ cup all-purpose flour
¼ cup rolled oats
½ cup granulated sugar
pinch of salt
For The Cake:
1 stick salted butter at room temp
½ cup granulated sugar
2 teaspoons pure vanilla extract
2 large eggs
1 ¼ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/8 teaspoon salt
3 tablespoons milk
3 Granny Smith apples, peeled and thinly sliced
Confectioners’ sugar for serving
- Preheat oven to 350 degrees.
- Butter a 9-inch round cake pan and line the bottom with parchment paper.
For topping:
- In a bowl, combine the flour, oats, sugar and salt.
- Rub cold butter into dry mix until the texture of coarse breadcrumbs.
- Set aside in refrigerator.
For cake:
- Cream butter and sugar in a large bowl with a mixer until light and fluffy.
- Add vanilla, then beat in eggs one at a time.
- In a bowl, combine flour, baking powder, cinnamon and salt.
- Fold dry ingredients into wet ingredients with rubber spatula along with milk.
- Transfer batter to prepared pan.
- Lay on apple slices arranging in one even layer.
- Cover apples with all the streusel topping.
- Bake at 350 degrees until the top is golden brown and crisp, 60-70 minutes.
- Remove from oven and let cool sightly before turning out of pan onto a rack.
- When ready to serve, dust cake with confectioners’ sugar.
