Irish Apple Cake


For Streusel Topping:

6 tablespoons cool salted butter, plus more for pan
¾ cup all-purpose flour 
¼ cup rolled oats
½ cup granulated sugar
pinch of salt

For The Cake:

1 stick salted butter at room temp
½ cup granulated sugar
2 teaspoons pure vanilla extract
2 large eggs
1 ¼ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/8 teaspoon salt
3 tablespoons milk
3 Granny Smith apples, peeled and thinly sliced
Confectioners’ sugar for serving

  • Preheat oven to 350 degrees. 
  • Butter a 9-inch round cake pan and line the bottom with parchment paper.

For topping: 

  1. In a bowl, combine the flour, oats, sugar and salt. 
  2. Rub cold butter into dry mix until the texture of coarse breadcrumbs. 
  3. Set aside in refrigerator.

For cake: 

  1. Cream butter and sugar in a large bowl with a mixer until light and fluffy. 
  2. Add vanilla, then beat in eggs one at a time. 
  3. In a bowl, combine flour, baking powder, cinnamon and salt. 
  4. Fold dry ingredients into wet ingredients with rubber spatula along with milk. 
  5. Transfer batter to prepared pan. 
  6. Lay on apple slices arranging in one even layer.  
  7. Cover apples with all the streusel topping.
  8. Bake at 350 degrees until the top is golden brown and crisp, 60-70 minutes.  
  9. Remove from oven and let cool sightly before turning out of pan onto a rack.  
  10. When ready to serve, dust cake with confectioners’ sugar.
